We elevated mini cracker sandwiches like Ritz Bits into a supremely crunchy, cheesy and peppery snack that’s pure noshing pleasure. Our trick is channeling Italy’s famous cacio e pepe (cheese and pepper) flavor duo usually reserved for pasta. Here we use sharp, tangy Pecorino-Romano and a liberal sprinkling of freshly cracked black pepper, then amp up the cheese with a generous amount of Parmesan so the crackers develop a lacy, crispy, frico-like coating while baking. And we haven’t even mentioned how easy they are to throw together: Just 6 ingredients and 10 minutes of simple prep will give you perfect party poppers or movie-night bites.

Directions
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Reserve 1 tablespoon Pecorino-Romano and 1 tablespoon Parmesan in a small bowl. Gently combine the cracker sandwiches, melted butter, remaining Pecorino and Parmesan, the coarse black pepper and garlic powder in a large bowl. Spread the crackers out on the prepared baking sheet in an even layer. Sprinkle evenly with the reserved 1 tablespoon Pecorino and 1 tablespoon Parmesan.
Bake until the cheese is melted and browned and crackers are fragrant, 10 to 12 minutes. Let cool completely before serving.
