A nostalgic nod to Southern cocktail fare, these party bites are a cousin of Welsh rarebit reimagined as crisply baked finger sandwiches. The sharp cheddar is spiced with tangy mustard, hot sauce and Worcestershire and melts into a rich treat that’s irresistible with a dab of sweet-hot pepper jelly. For the best texture use freshly shredded cheddar and take your time coating each square — the payoff is delicious. Cheese dreams freeze beautifully once assembled — a gracious host’s secret to easy entertaining.

  1. Position racks in the upper and lower thirds of the oven and preheat to 375 degrees F. Line 2 baking sheets with parchment paper and set aside.
  2. Combine the cheddar and butter in the bowl of a stand mixer fitted with the paddle attachment and beat on medium until smooth and combined, 1 to 2 minutes. Add the egg, cream, garlic powder, mustard, hot sauce, Worcestershire and 1 1/4 teaspoons kosher salt and mix until well blended.
  3. Discard the ends of the bread loaf or save them for another use. Cut the crusts from the remaining slices. Lay half of the slices on your work surface and spread a tablespoon of the cheese mixture onto each piece using a small offset spatula. Top with the remaining bread slices to make sandwiches, then cut each sandwich into 4 squares. Spread a thin layer of the cheese mixture on the sides and tops of each square, leaving the bottoms clean. (The easiest way to coat the squares is to hold them by the top and bottom and coat the sides first, then place them onto your work surface and ice the tops.) Don’t worry if some spots are bare; the mixture will melt together in the oven. The cheese-coated squares can be frozen at this point (see Cook’s Note).
  4. Divide the squares between the prepared baking sheets. Bake, rotating the pans from top to bottom and front to back halfway through, until golden brown on the edges, about 15 minutes.
  5. Serve warm or at room temperature with hot pepper jelly for dipping.

Cook’s Note

To freeze the cheese dreams, arrange the assembled cheese-coated squares in a single layer on a baking sheet and freeze until firm, about 1 hour. Transfer them to an airtight container or resealable freezer bag and freeze for up to 1 month. Bake straight from frozen on a parchment-lined baking sheet at 375 degrees F until golden and heated through, about 22 minutes.
