This recipe takes inspiration from elote, a popular Mexican street food of corn on the cob coated in a creamy dressing, then topped with Cotija, chile powder and lime juice. For this version, sweet summer watermelon is cut into finger-friendly planks, then finished with all the delicious elote toppings. This recipe is great for a picnic or backyard barbeque; just slice the watermelon ahead of time and dress it right before serving.
Place the watermelon cut-side down on a cutting board. Cut off the 4 “cheeks” until the red flesh is exposed and the watermelon forms a rounded square with the green rind on top only; discard the cheeks. Slice the watermelon across into 1-inch-wide planks. Rotate the watermelon 180 degrees, then slice again into 1-inch pieces to make a grid with 1-inch squares.
Lay the watermelon planks down on a large cutting board. Brush 1 side of each plank with the lime juice, then sprinkle evenly with the Cotija, lime zest, flaky sea salt and chile powder. Transfer to a serving platter and drizzle with the olive oil.
Cook’s Note
If larger watermelons are out of season, feel free to use a mini watermelon. The ingredient amounts above will work for a whole mini watermelon or half of a larger one.
