A few clever swaps preserve the creamy texture and nostalgic flavor of a classic banana pudding while transforming it into a healthy, feel-good dessert. Whipped cottage cheese becomes irresistibly silky, and blending in banana makes a luscious base that’s light on added sugar but rich in flavor. Layered with vanilla wafers and fresh banana slices, it's pure comfort for pudding lovers. And with 10 grams of protein per serving, it’s perfect for satisfying a sweet craving or even starting your day with a delicious boost of fruit and protein.
Set aside 1/4 cup of the cottage cheese. Add the remaining 1 3/4 cups cottage cheese to a blender along with the brown sugar, 1 banana and 1 teaspoon of the vanilla bean paste. Blend until smooth, about 1 minute. Set aside.
To a clean blender, add the reserved 1/4 cup cottage cheese, the heavy cream, maple syrup and remaining 1 teaspoon vanilla bean paste. Blend until you have a soft whipped cream, 1 to 2 minutes. Set aside.
Slice the remaining 2 bananas into 1/4-inch-thick slices. Set aside.
Have ready six 6-ounce glasses or ramekins. Break 2 vanilla wafers into large pieces to fit in the bottom of one. Repeat with the other glasses or ramekins. Next divide the banana-cottage cheese mixture among the glasses. Lay 4 to 5 slices of banana on top in as even a layer as possible. Break apart 2 more wafers to layer on top of each glass. Divide the whipped cream mixture among the glasses. Crush the remaining 4 wafers and sprinkle them over the puddings. Cover and refrigerate for 4 hours or overnight before serving.
