We blend cottage cheese until it’s perfectly smooth to replace butter and eggs, giving the dough a luxurious, creamy texture and a major boost of protein — 8 grams per serving. Combined with almond flour, which keeps the dough naturally gluten-free, it's quick and easy and the finished dough is safe to eat raw.   1. Combine the almond flour, sugar, sprinkles, and chocolate chips in a large bowl and toss well. Combine the cottage cheese, vanilla extract and birthday cake extract, if using, in a food processor and process until smooth, about 1 minute. Fold the whipped cottage cheese mixture into the flour until combined. Cover the bowl and refrigerate for 30 minutes.
  2. Serve the dough by chilled 1/4-cup scoops. The dough can be refrigerated in an airtight container for up to 5 days.
