Farro pilaf on its own is a heart-warming side dish perfect with most any dinner. It’s a blank canvas that can easily be adjusted. This recipe starts by cooking farro with onion, celery, chicken broth and bay leaf. Then, stir in chopped sauerkraut and fresh dill, which adds tang, crunch and freshness. The result is a slightly unexpected side that’s both healthy and full-flavored, which can work well with most any simply cooked protein or vegetables.

Directions
Cook 1 each finely chopped onion and celery stalk in 2 tablespoons butter in a saucepan over medium heat, 4 minutes. Add 1 cup farro, 1/2 teaspoon kosher salt, a few grinds of pepper, 2 cups low-sodium chicken broth and 1 bay leaf; bring to a boil, reduce to low, cover and cook until the broth is absorbed, 20 to 30 minutes. Let stand 5 minutes. Stir in 1 cup sauerkraut and 1/4 cup chopped dill.
