Garlicky Slow-Cooker Broccoli Rabe with Parmesan

Broccoli rabe takes incredibly well to the long and gentle cooking of a slow cooker, which brings out the vegetable’s natural sweetness and mellows some of its bitterness. Just combine it with a few simple ingredients – olive oil, garlic, red pepper flakes and a bit of broth – and let it cook slowly until soft, juicy and flavorful – no stirring or babysitting required. Finish with a squeeze of fresh lemon juice for brightness and a shower of Parmesan. It’s especially delicious as a side dish with meat, such as pork chops or grilled sausage.

a 6-quart slow cooker
  1. Add the broccoli rabe, olive oil, red pepper flakes, garlic and 3/4 teaspoon salt to a 6-quart slow cooker. Stir with tongs to coat evenly. Drizzle with the chicken broth. Cover and cook on high until soft and tender, about 3 hours. Season with more salt if needed.
  2. Arrange the broccoli rabe on a serving platter. Squeeze lemon juice on top and drizzle with olive oil. Sprinkle with the Parmesan and a pinch of red pepper flakes.
