Sauteed Broccoli Rabe With Garlic

2 heads broccoli rabe

1/4 cup olive oil

3 cloves garlic, chopped

1/2 tsp. crushed red pepper flakes

1/4 cup dry breadcrumbs

salt and pepper to taste

  1. Blanch broccoli rabe in a large pot of boiling salted water for 2-3 minutes. Drain and shock in ice bath. Drain and wrap in a dry towel, squeezing out any excesss water. In a large saute pan, cook garlic and crushed red pepper flakes for 1 minute. Add broccoli rabe and cook and stir until heated through. Stir in breadcrumbs and toss all together. Season to taste with salt and pepper.
