Directions
Cook 1 1/2 pounds Yukon Gold potatoes (peeled and halved) in salted simmering water until tender, 12 to 15 minutes; drain. Slice and toss with 1/3 cup minced onion. Microwave 1/3 cup beef broth, 1 tablespoon white vinegar and 1 teaspoon each Dijon mustard, sugar and kosher salt until hot, 30 seconds. Pour over the potatoes; let sit until absorbed, 8 to 10 minutes. Toss with 2 tablespoons each vegetable oil and chopped parsley; season with salt and pepper.
