This is summer on a plate: juicy grilled pork chops, sweet-tart cherries and crisp fennel tossed in a light champagne vinaigrette. The pork gets a quick fennel seed and brown sugar rub for smoky, caramelized flavor, while the salad adds a cool crunch with bright pops of juicy cherries. It’s a vibrant, no-fuss dinner that makes the most of seasonal produce.

Directions
Preheat a grill to medium-high. Season the pork chops with salt and pepper; if the pork chops are on the thinner side, score the fat on the side to keep them from curling. Mix together the fennel seeds and 2 teaspoons brown sugar, then rub all over the pork. Let sit at room temperature, 20 minutes.
Make the dressing: Combine 3 tablespoons olive oil, the vinegar, mustard, remaining 1 teaspoon brown sugar and a pinch each of salt and pepper in a small jar. Cover with a lid and shake vigorously to emulsify.
Rub the pork chops with the remaining 1 tablespoon olive oil. Grill until well marked and just cooked through, 2 to 3 minutes per side.
Combine the lettuce, sliced fennel and fronds, the cherries, almonds and chives in a large bowl. Add the dressing, toss to coat and season with salt and pepper. Serve with the pork chops.
