These healthy peanut butter buckeyes put a better-for-you twist on the classic regional treat. Made with creamy natural peanut butter, almond flour and a touch of maple syrup, they’re lightly sweet and irresistibly nutty. A layer of dark chocolate and a bit of crispy brown rice cereal add crunch and that nostalgic buckeye bite — no confectioners’ sugar needed! Perfect for gifting, snacking or keeping stashed in the freezer for when a chocolate-peanut butter craving strikes.

  1. Beat the peanut butter, almond flour, maple syrup, vanilla and salt in a large bowl with an electric mixer on medium speed until smooth and combined. Add the brown rice cereal and beat until just incorporated.
  2. Roll and press into 18 even-sized balls (about 2 tablespoons each); set aside on a parchment-lined baking sheet.
  3. Microwave the chocolate chips and vegetable oil in a shallow microwave-safe bowl on high, stirring occasionally, until completely melted and smooth, about 2 minutes.
  4. Stick a toothpick into the top of a ball. Dip the ball into the chocolate mixture and coat most of the ball, leaving an uncoated circle on top; let excess chocolate drip off. Return the ball to the baking sheet and remove the toothpick. Repeat with the remaining balls and chocolate mixture. Smooth out the holes left by the toothpick if desired. Refrigerate until the chocolate is set and the peanut butter ball is very firm, about 1 hour. Keep refrigerated until ready to serve.
