Peanut Butter-Chocolate Protein Bars

You can make your own healthy protein bars with just a few simple ingredients. This peanut butter and chocolate version is perfectly chewy and delicious.

  1. Preheat the oven to 325 degrees F. Line a 9-inch-square baking pan with foil, leaving a 2-inch overhang on at least 2 sides. Brush with coconut oil.
  2. Add the dates and peanuts to a food processor and process until finely ground and sticky. Add the cocoa powder, salt and egg whites and process until combined. 
  3. Press the mixture into the prepared pan and bake until the surface has lightened in color and is no longer shiny, about 20 minutes. Let cool for 20 minutes in the pan, then chill in the refrigerator until firm, about 2 hours. Lift out of the pan using the foil and cut into 16 squares. Store in the refrigerator for up to 1 week.
