Lower-Sugar Peanut Butter Cereal Treats

These wholesome and healthy lower-sugar snack bars are the perfect balance of crunchy, chewy and chocolatey without the excess sugar of more traditional versions. Made with brown rice crisp cereal, unsweetened peanut butter and just a touch of sweetness from raisins and dark chocolate, they’re a satisfying treat with only 7 grams of added sugar per serving. Best of all, they come together in minutes and there's no baking involved – just mix, press and chill. Whether you need a quick healthy snack or a better-for-you dessert, these bars deliver on flavor while keeping things simple.

  1. Line an 8-inch square baking pan with foil overhanging the edges on all sides and butter the foil. Combine the cereal, raisins and cacao nibs in a medium bowl and toss to combine.
  2. Melt the butter in a medium saucepan over medium-low heat. Add the brown sugar and stir until melted. Add the peanut butter and vanilla and cook, stirring, until heated through and smooth, 1 to 2 minutes. Add the cereal mixture and stir to coat evenly in the peanut butter mixture.
  3. Spread the mixture into the prepared pan, cover the surface with foil and press with your hands to flatten and compress the top. Chill until set, about 30 minutes.
  4. Microwave the chocolate chips in a small microwave-safe bowl in 15-second intervals until mostly melted, 30 seconds to 1 minute. Stir until smooth. Drizzle over the top of the cereal mixture and return to the refrigerator until hardened, about 5 minutes.
  5. To serve, remove the bars using the foil overhang to lift them from the pan. Cut into a 3-by-3 grid to make 9 bars.

Cook’s Note

Food Network defines lower sugar as less than 8 grams of added sugar per serving. Since we don’t use marshmallows to make these treats, they're a bit more crumbly than traditional cereal treats. Make sure to take the time to firm them up in the fridge before cutting into bars.
