Although it’s most often used to make hot tea, matcha—a type of green tea popular in Japan— can be used to add flavor and color to everything from ice cream to baked goods to cocktails like this gin and tonic.
Stir 1/4 teaspoon matcha powder with 2 ounces gin until dissolved. Pour through a fine strainer into a tall glass filled with ice. Pour in 4 ounces cold tonic water. Garnish with a cucumber slice.
