This is a deliciously wholesome treat that combines the flavors of a classic morning glory muffin with the indulgence of cake. Packed with grated apples, carrots, coconut and pecans, it’s a nourishing and flavorful way to start the day. Topped with a creamy spiced frosting and garnished with crystallized ginger, apple chips and toasted coconut, this cake is both satisfying and festive. Directions
Make the cake: Preheat the oven to 350 degrees F. Coat two 6-inch round cake pans with cooking spray and line the bottoms with parchment.
Whisk together both flours, the oats, baking powder, cinnamon, ginger, salt and baking soda in a bowl. Whisk the brown sugar, vegetable oil and yogurt in a large bowl; whisk in the eggs and vanilla, then stir in the oats mixture (do not overmix). Fold in the apple, carrot, coconut, pecans and raisins. Divide between the pans; bake until a toothpick inserted into the center comes out with a few crumbs, 25 to 30 minutes. Transfer to a rack to cool for 10 minutes, then invert onto the rack, remove the parchment and let cool completely.
Make the frosting: Beat the butter and cream cheese in a bowl with a mixer on medium-high speed until smooth. Scrape down the bowl, then add the confectioners’ sugar, cinnamon, ginger and vanilla. Beat on low to combine, then beat on medium-high until smooth and fluffy, about 1 minute.
Trim the top of one cake to make it level, then spread half of the frosting on top. Place the other cake on top and cover with the remaining frosting, leaving the sides bare. Garnish with the crystallized ginger, apple chips, coconut flakes and pecans. Refrigerate 30 minutes before serving.
