The muffuletta sandwich is a New Orleans classic — Italian deli meats and cheese topped with a briny olive and giardiniera salad on soft, seeded semolina bread. We’ve taken those flavors and used them to top warm, cheesy potato skins for a vibrant, fun and downright delicious party appetizer.

Directions
Preheat the oven to 375 degrees F. Pierce the potatoes with a fork. Bake directly on the oven rack until tender, about 1 hour. Let cool.
Meanwhile, combine the olives, giardiniera and brine, the celery, shallot, parsley and oregano in a medium bowl and toss. Drizzle with the olive oil, toss again and season with salt and pepper.
Increase the oven temperature to 450 degrees F. Quarter the potatoes lengthwise and scoop out the flesh, leaving a 1/4-inch-thick shell. Brush both sides with the melted butter and season with salt and pepper. Place on a baking sheet and bake, skin-side up, until crisp, about 15 minutes, then flip over. Lay a strip of provolone over each potato skin and bake until the cheese is melted and golden, about 5 more minutes.
Evenly distribute the sliced meats among the potato skins, then spoon the olive mixture on top. Garnish with pepperoncini.
