Pico de Gallo Stacks

Make a personal tower of pico de gallo by layering slices of tomato with onion, jalapeno and cilantro. Drizzle with a spicy lime dressing and top with crushed tortilla chips.

4 large tomatoes, thickly sliced

Kosher salt and freshly ground black pepper

2/3 cup fresh cilantro leaves, plus more, for serving

1/4 cup chopped red onion

1 tablespoon thinly sliced jalapeno

1/3 cup mayonnaise

1 tablespoon chopped chipotle in adobo

2 teaspoons freshly squeezed lime juice

Tortilla chips, for serving


  1. Season the tomato slices with salt and a couple turns of pepper. Top a slice of tomato with some cilantro, onion and jalapeno. Top with another slice of tomato and repeat. Top with a third slice of tomato. Repeat with the remaining tomatoes to create 4 stacks in total.
  2. Stir together the mayonnaise, chipotle in adobo and lime juice in a small bowl. Drizzle the tomato stacks with the dressing and crumble tortilla chips over the top. Sprinkle with cilantro.
