Beets are a versatile and nutritious vegetable that are often overlooked outside of salads. This weeknight-friendly side simply high-heat roasts beets until tender. Top them with a nutty and creamy mixture of tahini and lemon, and finish with scallions and dill for color and fresh flavor.

Directions
Peel 1 3/4 pounds beets and cut into 3/4-inch chunks. Toss with olive oil, salt and pepper on a rimmed baking sheet. Bake at 450 degrees F, tossing once, until tender, about 35 minutes. Stir together 3 tablespoons each tahini and hot water, 2 tablespoons lemon juice, 1 tablespoon olive oil and a pinch of salt. Drizzle over the beets and sprinkle with chopped dill and sliced scallions.
