Scallion and Parmesan Mashed Sweet Potatoes

2 1/2 pounds sweet potatoes (about 6), peeled and cubed

Kosher salt and freshly ground pepper

4 tablespoons unsalted butter, cut into small pieces

2 tablespoons grated Parmesan, plus more, for serving

2 scallions, green part only, thinly sliced, plus more, for serving


  1. Put the potatoes in a large pot and cover with cold water; salt the water liberally. Bring to a boil and cook until tender, 8 to 10 minutes. Drain well and return to the same pot set over low heat. Mash until smooth with a potato masher. Add the butter, Parmesan and salt and pepper to taste. Mash until the butter has melted. Stir in the scallions. Serve sprinkled with Parmesan and scallions.
