Roasted cauliflower gets a makeover here. First, cut it into slices instead of florets, which maximizes the roasting surface area, resulting in a browner and crispier vegetable. Second, we toss the cauliflower in a spice mix evoking the flavors of shawarma, which provides color and warming flavors. Finish with a drizzle of pomegranate molasses and lemon for tang and freshness.

Directions
Cut 1 trimmed head cauliflower vertically into 1/2-inch-thick slices. Gently toss with 3 tablespoons olive oil, 1 teaspoon each cumin and paprika, 3/4 teaspoon kosher salt and a pinch each of cinnamon, turmeric and pepper. Roast at 450 degrees F on a preheated baking sheet on the bottom oven rack until tender, 20 to 25 minutes, flipping halfway through. Drizzle with pomegranate molasses, lemon juice and more olive oil.
