  1. Toss the Monterey Jack and cheddar with the cornstarch in a medium bowl to coat. Combine the tossed cheeses, diced tomatoes and green chiles with their juices, cream cheese, yogurt, heavy cream and chipotle chile powder in a medium cast-iron skillet and set over low heat. Cook, stirring often, until all of the cheese is melted, 3 to 4 minutes, then whisk until smooth. Remove from the heat and top with the pickled jalapeños, plum tomatoes, scallions and cilantro. Serve immediately with tortilla chips.
