Spinach, Pecan and Cheddar Pesto

Mix up a new version of pesto with aged Cheddar, spinach and thyme.

1/3 cup lightly toasted pecans

3 cups loosely packed spinach

1 teaspoon chopped garlic

1/2 teaspoon chopped fresh thyme

Kosher salt

1/2 cup coarsely grated aged Cheddar

1/2 cup vegetable oil


  1. Put the pecans in a food processor and pulse until finely ground. Add the spinach, garlic, thyme and 1/4 teaspoon salt and pulse until finely chopped. Add the Cheddar and pulse to combine. With the motor running, slowly stream in the vegetable oil and process until combined. Transfer to a bowl.
