These pretty pink palmiers look impressive but couldn’t be simpler — they just take three ingredients and a little folding magic. Freeze-dried strawberries turn plain sugar into a sweet, tangy coating that caramelizes beautifully as the puff pastry bakes. The result? Crisp, buttery cookies with a delicate strawberry twist, perfect for an easy dessert or an afternoon snack with tea.

Directions
Finely grind 1/2 cup freeze-dried strawberries in a food processor; mix with 1/2 cup sugar. Unfold 1 sheet thawed frozen puff pastry onto a surface sprinkled with 1/2 cup sugar; top with the strawberry sugar. Roll out into a 13-inch square. Fold in two opposite sides halfway to the middle, then fold in again so they meet. Fold in half, as if closing a book. Slice the dough crosswise into 1/4-inch-thick slices; arrange on 2 parchment-lined baking sheets. Bake at 450 degrees F on the bottom oven rack, 1 pan at a time, until golden and caramelized, 6 to 8 minutes per side. Let cool.
