The Joey Special: Two Pizzas

This recipe goes out to fans of the television series Friends and pizza lovers alike. In one episode from season 4, Joey phones Phoebe from London and becomes incredibly homesick for New York City when he hears she’s ordered “the Joey special”— two pizzas! While it isn’t exactly clear what toppings come on the pizzas, we assume it would be some sort of meat and nothing too fancy. Our riff on the Joey special is a “stacked” pizza, one with meat lovers’ sausage-and-pepperoni on the bottom and plain mozzarella on top. It’s like a pizza sandwich, and we’re sure Joey would approve.

  1. Add the tomatoes and juices to a medium saucepan and use clean hands to crush the tomatoes until no large pieces remain. Stir in the garlic, sugar, oregano, pepper flakes, 1 teaspoon salt and a few grinds of black pepper. Bring to a simmer over medium heat. Reduce the heat to low and continue to simmer, stirring occasionally, until the sauce has reduced by half, 25 to 30 minutes. Remove from the heat and stir in the Parmesan until melted.
  2. Meanwhile, preheat the oven to 450 degrees F. Brush a rimmed baking sheet with olive oil.
  3. Cook the sausage in a small nonstick skillet over medium-high heat, breaking up the pieces with a wooden spoon, until no longer pink, 4 to 5 minutes. Remove from the heat and set aside.
  4. Once the sauce is ready, brush one of the pizza crusts with 1 tablespoon olive oil and place, oil-side down on the prepared baking sheet. Spread 1/2 cup of the sauce over the crust leaving about a 1/2-inch border around the edges. Top with the cooked sausage and the pepperoni, then sprinkle with 1 cup of mozzarella.
  5. Brush one side of the remaining pizza crust with the remaining 1 tablespoon olive oil and place it directly on top of the meat pizza, oil-side down. Spread 1/2 cup sauce over top of the crust leaving about a 1/2-inch border around the edges. Sprinkle with the remaining 1 cup mozzarella cheese. Bake until the cheese has melted, the bottom crust is crispy and golden brown and the cheese is turning golden in spots, 20 to 30 minutes.
  6. Let the pizza rest for 10 minutes. Slice into wedges and serve with the remaining sauce on the side.
