Directions

  1. Bring 2 1/2 cups water, 1/2 cup canned tomato sauce and 1/2 teaspoon kosher salt to a simmer in a saucepan. Stir in 3/4 cup quick-cooking grits. Cook, stirring, until thickened, 5 minutes. Remove from the heat, then stir in 1/2 cup shredded pepper Jack, 1 tablespoon butter and 3 tablespoons chopped chives. Season with salt and pepper. Top with 1 chopped plum tomato and more chives and cheese.
