These chewy lo mein noodles are coated in a creamy, savory sauce and packed with vegetables. Crisp-tender asparagus, fresh bean sprouts and sweet shredded carrots give these sesame noodles a bright take on the classic. Top with a fried egg with a runny yolk for extra protein and finish with more chili crisp for an extra punch of warm, spicy flavor.

Directions
Bring a large pot of water to a boil. Whisk together the sesame paste, soy sauce, rice vinegar, 1 tablespoon sesame oil, the peanut butter, chili crisp and 6 tablespoons hot water in a large bowl until the dressing is combined and creamy.
Heat the remaining tablespoon sesame oil in a large nonstick skillet over medium heat. Add the eggs and fry sunny-side up until the whites are set, about 2 minutes.
Add the lo mein noodles to the boiling water and cook as the label directs. In the last minute of cooking, add the asparagus and cook until bright green and just tender. Drain in a colander, shaking a few times to remove as much water as possible.
Add the noodles, asparagus and scallions to the bowl with the dressing and toss to coat. Add the carrots and bean sprouts and toss to combine. Add more hot water, 1 tablespoon at a time, if it seems dry. Divide the noodles among bowls and top each with a fried egg. Serve with more chili crisp.
