Grilled Swordfish with Mango Salsa

  1. Preheat a grill to medium-high. Grill the corn, turning occasionally, until charred, about 10 minutes; cut the kernels off the cob. Meanwhile, grill the mangoes until charred, about 2 minutes per side. Place on a cutting board and let cool slightly, then roughly chop. Combine the mangoes in a bowl with the corn, diced limes, lime juice, red onion, habanero, cilantro, avocado and a big pinch of salt.
  2. Combine the chile powder, coriander and a pinch of salt in a small bowl. Brush the fish on both sides with the olive oil and sprinkle with the spice rub. Grill until the outside is nicely charred and the interior is cooked through, about 4 minutes per side, depending on the thickness.
  3. Transfer the fish to a platter, season with salt and pepper and top with the salsa. Drizzle with olive oil and top with cilantro. Serve with lime wedges.
