Milanese, in cooking, refers to a method of coating meat in flour, egg and breadcrumbs and then browning it in hot oil or butter. There are many iterations of this, and the result is a crunchy exterior that is extremely satisfying and pairs excellently with a bright salad of bitter greens like this tricolore.

  1. For the salad: In a small bowl or mason jar, combine the vinegar, miso, Dijon, honey, soy sauce and garlic. Whisk in the olive oil to make the dressing or shake if using a mason jar. Season with salt and pepper. Place the arugula, endive, radicchio and Parmesan in a large bowl. Reserve the salad and dressing in the refrigerator separately.
  2. For the steak: Place the flour, eggs and panko separately in three medium bowls. Stir the Parmesan, garlic powder and herbs into the panko. Working one at a time, dredge the steak in the flour first, then the egg, then coat it in the panko mixture. Set aside on a plate or wire rack.
  3. Heat a large skillet over medium heat and add about 1/4 cup oil or ghee until hot. Add the steak (and rosemary and thyme sprigs if using for added flavor) and cook until golden brown, 3 to 5 minutes on each side. Transfer from the skillet to a sheet pan lined with a rack or paper towels. Season with salt and pepper. Dress the salad and plate immediately with the steak.
