Ingredients

1 head butter lettuce, torn into bit-size pieces

1/4 cup torn fresh mint leaves 

1/4 cup thinly sliced radishes 

3 tablespoons toasted salted sunflower seeds 

1 tablespoon apple cider vinegar 

3 tablespoons extra-virgin olive oil 

1/2 teaspoon kosher salt 

1/2 cup freshly grated Pecorino-Romano cheese 

Directions

  1. Toss the lettuce with the mint, radishes and sunflower seeds in a large bowl. In a small bowl, whisk together the cider vinegar, olive oil and salt. Drizzle the salad with the dressing, and sprinkle with the Pecorino-Romano.
