Directions
Make the jalapeno simple syrup: Char the jalapeno under the broiler or directly over a gas stove burner, turning with tongs, until blackened all over. Transfer to a small saucepan and add the sugar and 1/2 cup water. Bring to a simmer, stirring to dissolve the sugar and lightly crushing the pepper. Remove from the heat and let cool to room temperature. Refrigerate until chilled.
Make the margarita: Combine the Mezquila, passion fruit juice, 3/4 ounce jalapeno simple syrup, the Cointreau and lime juice in a cocktail shaker filled with ice. Shake until very cold, 30 seconds.
Moisten the rim of a glass with water, then dip in salt. Fill the glass with ice. Strain the cocktail into the glass and garnish with a lime wheel.
