Spray a large ceramic mug with cooking spray. Add the butter and white parts of the scallion to the mug and microwave until softened, 1 minute. Add the remaining scallion greens, milk, eggs, ham, Cheddar and a pinch each of salt and pepper. Whisk together until the eggs are well-combined. Microwave until the egg is set, 2 to 3 minutes, depending on microwave strength. (Do not overcook or the eggs will become rubbery.)
