Honey Boi Fried Chicken Sandwich

  1. For the sesame slaw: In a large bowl, add the mayo, sesame oil, soy and salt. Mix thoroughly. In a medium bowl, place the cabbage slaw mix and 3 tablespoons of the dressing (save the rest of the dressing for another use). Mix thoroughly, then let sit for 20 minutes before serving. Place in an airtight container.
  2. For the smoky lime mayo: In a large bowl, mix together the mayonnaise, lime zest and juice. In a small bowl, mix together the garlic powder, smoked paprika and salt thoroughly to break up any clumps. Sprinkle the dry mixture over the mayo and mix thoroughly. Place in an airtight container.
  3. For the marinated chicken: In a large bowl, add the buttermilk, bouillon, dill, garlic powder, onion powder, salt, tarragon, lemon zest and juice. Mix thoroughly. Add the chicken and cover with the marinade. Let the chicken marinate, covered and refrigerated, for at least 4 hours, but overnight is ideal.
  4. Drain the chicken of the excess buttermilk. Coat in your favorite fried chicken breading. Let sit for 20 minutes for the breading to adhere.
  5. Fry the chicken at 350 degrees F for 3 minutes, then let cool on a roasting rack for 10 minutes. Fry again at 350 degrees F until the internal temperature reaches 165 degrees F, about 3 minutes. F.
  6. Spread the smoky lime mayo on the buns, then layer with the fried chicken and sesame slaw, and serve!
