Special equipment:
a 10-gallon crawfish boiler pot
In a 10-gallon crawfish boiler pot, add 7 gallons of water. Mix in the seafood boil seasoning, then the potatoes, mushrooms, bay leaves, garlic, lemons, carrots, onions, oranges and celery. Mix everything in the pot with a paddle. Bring everything to a rolling boil. Add the crawfish to the pot. Stir with the paddle and close the lid. Wait for the mixture to come back to a rolling boil, then turn the heat off. Add the frozen corn to the pot. This will help cool down the pot and the cooking process. Let everything soak in the pot for about 30 minutes. Serve hot on a tray or community backyard boil (buffet) style.
Cook’s Note
If the crawfish isn’t pre-cleaned, you can add them to a large cooler and keep rinsing until the water is clear.
