Italian Bagel Caprese

4 bagels, assorted flavors

1 package Stracchino or Crescenza cheese (or substitute another very soft cow's milk cheese)

2 ripe tomatoes, sliced

1/2 red onion, sliced, optional

12 fresh basil leaves

Sea salt, for topping


  1. Slice the bagels in half horizontally and slather the bottom cut sides with the Stracchino cheese. Top with the sliced tomatoes, onions if using, basil leaves and sea salt. Top with the bagel lids and serve.

Cook’s Note

This works well as an open-faced bagel and is also great with prosciutto.
