Directions
For the marinade: Combine the pineapple juice, oil, rum, allspice, garlic, onion powder and paprika in a large bowl. Add the steak tips and marinate, refrigerated, overnight or for 10 to 12 hours.
For the pepper pot sauce: Sauté the onions and peppers in the oil in a stockpot until softened, about 6 minutes. Add the red wine, jerk seasoning, garlic, allspice and paprika. Sauté for an additional 4 minutes. Add the beef stock and bring to a boil. Simmer to marry the ingredients, about 30 minutes.
Grill the steak tips to your preferred temperature. Add them to the hot pepper pot sauce. Prepare 4 to 6 bowls with mashed potatoes. Spoon the steak and sauce over the potatoes. Top with the sliced scallions and serve.
