Bacon, Egg and Cheese on a Kaiser Roll with Giardiniera-Honey Butter

  1. Preheat the oven to 350 degrees F. Place the bacon on a parchment-lined sheet tray and bake until crispy, about 10 minutes. Drain on a paper towel.
  2. Meanwhile, combine the butter, giardiniera and honey in a bowl. Spread the giardiniera butter on each kaiser roll, crust to crust. Toast the rolls, buttered side down, in a nonstick skillet over medium-low heat until golden brown, 1 to 2 minutes. Remove from the pan and place 2 slices of cheese and 2 slices of bacon on each bottom half. Set aside and keep the pan.
  3. Add a little vegetable oil to the pan over medium-low heat. Crack the eggs into the pan and poke holes into the whites. Cover with a lid and cook until the whites are set and the yolks are still a bit runny, 1 to 2 minutes.
  4. Wiggle each egg out of the pan onto each bun with the bacon and cheese. Add 1 slice of tomato and top with the other half of the kaiser roll. Wrap with parchment to serve.
