I absolutely have a zero shut-off switch when it comes to consuming dumplings, aka, what I like to call, Slurping Dumps. This a great recipe to start exploring the wonderful and gratifying world of home dumpling making. I like using fish sauce to give the filling an extra umami boost.

Directions
For the dipping sauce: Add the vinegar, sugar, ginger, Fresno and garlic to a small saucepan over medium-low heat and cook, stirring, until the sugar is dissolved and the sauce reduces slightly. Remove from the heat to cool.
For the egg wash: Whisk together the egg with 1 tablespoon water and set aside.
For the filling: Combine the pork, Shaoxing wine, cornstarch, fish sauce, ginger, soy sauce, sesame oil, sugar, salt and scallions in a large bowl with the water. Mix well to combine; I found using your hands can sometimes be the best way.
For the wontons: Lay out the wonton wrappers on a clean work surface. Place a scant tablespoon of the filling in the center of each wrapper. Moisten the edges of the wrappers with a little of the egg wash, then fold each into a triangle. Press to seal the wontons, squeezing out any trapped air; this will ensure that the wontons stay closed during pan frying.
Heat a nonstick pan with a thin layer of vegetable oil over medium-high heat. Once shimmering, working in batches, add the wontons in a single layer, making sure not to overcrowd the pan. Cook until deep golden on the bottom, 2 to 3 minutes. Carefully add 2 to 3 tablespoons of water to the pan and cover to cook until the water is evaporated and the wontons are cooked through, another 2 to 3 minutes. Serve with the dipping sauce and enjoy!
