For the waffles: Fill a deep, heavy pot with 3 inches of oil; heat to 350 degrees F.
Mix the dry ingredients and the wet ingredients separately, then mix them together. Cook in a waffle maker, then deep-fry for about 45 seconds.
For the fried chicken: Mix all the dry ingredients in a large bowl. Pour the buttermilk into a second bowl. Pat the chicken dry and sprinkle generously with salt and pepper. Dip the chicken in the flour mixture, then in the buttermilk, and again in the flour. Deep-fry until the outside is crispy and the center is white.
For the bananas foster sauce: Melt the butter in a medium skillet over medium heat. Add the brown sugar; stir until dissolved. Add the rum and flambe. Add the bananas and cook for 2 minutes. Pour over the chicken and waffles, and enjoy!

Use extreme caution when igniting alcohol. Remove the pan from the heat source before adding the alcohol. Pour the alcohol into the pan and carefully ignite with a match or click lighter. Return the pan to the heat and gently swirl to reduce the flames.
