This Lemon Ramyun, from my book Hand Taste: Cook Like a Korean Grandmother, is my playful twist on classic instant ramen — spicy and comforting, but with a bright, zesty kick. I love taking something as simple as a pack of ramen and turning it into something a little more fun and elevated. The garlic and ramen spices bloom in olive oil, then a hit of fresh lemon and Parmesan makes the broth creamy, tangy and a little indulgent. A silky egg yolk stirred in adds richness, while the noodles stay perfectly chewy. It’s quick, cozy and full of flavor — the perfect 15-minute upgrade when you want something comforting but a little unexpected.

  1. Add the olive oil, garlic and both ramen seasoning packets to a small pot over medium heat. Cook until the spices bloom and the garlic toasts slightly, 1 to 2 minutes. Add the lemon zest and 2 1/2 cups water and bring to a boil. Add the ramen noodles and cook for 1 minute for the noodles to soften.
  2. Squeeze the juice from 1 of the lemon halves into a small bowl and whisk in the Parmesan, egg yolk and 1/4 cup of the hot noodle liquid to temper. Add the yolk mixture to the noodle pot and continue to cook for about 10 seconds. Remove from the heat.
  3. Transfer to a bowl. Cut a slice from the remaining lemon half and add to the bowl. Garnish with chopped parsley and more Parmesan.
