Directions
Make the pico de gallo: Combine the tomatoes, red onion, jalapeño, lime juice, orange juice and cilantro in a bowl; season with salt to taste.
Make the cilantro crema: Combine the sour cream, mayonnaise, garlic, cilantro, lime juice and a pinch of salt in a bowl. Refrigerate the pico de gallo and crema until ready to serve.
Make the fish tacos: Slice the fish into 20 to 24 strips, about 3/4 inch wide. Whisk the flour, chili powder, cumin, garlic powder and 1 teaspoon salt in a medium bowl. Whisk in the beer until the batter is smooth.
Fill a wide, straight-sided pot or Dutch oven fitted with a deep-fry thermometer with 1 to 2 inches of vegetable oil and heat to 350 degrees F. Working in batches, dip the fish in the batter and fry until golden, 3 to 4 minutes. Drain on paper towels.
Warm the tortillas as directed. Fill with the fish; top with the crema and pico de gallo. Serve with lime wedges.
