Directions

  1. For the meatloaf: Preheat the oven to 350 degrees F.
  2. In a large bowl, combine the beef, breadcrumbs, ketchup, beef base, garlic powder, seasoning salt, eggs, carrot, green pepper and onion and mix well. Form into a loaf and place in a 4-by-6-inch loaf pan. Place in the oven and cook until the interior temperature reaches 160 degrees F, about 1 hour.
  3. For the red skin mashed potatoes: Fill a large pot halfway with water and bring to a boil. Add the potatoes and reduce the heat to medium. Simmer until the potatoes are tender, 20 to 25 minutes. Combine the milk and butter in a pan and bring to a low simmer until the butter is melted. Drain the potatoes and transfer back to the pot. Slowly add the warm milk mixture, blending it together with a mixer until the potatoes are smooth. Add salt and black pepper to taste.
  4. For the brown gravy: Add the beef broth, Worcestershire sauce, onion powder, garlic powder, salt, pepper and thyme to a saucepan and bring to a boil over medium to high heat. In a small mixing bowl, add the cold water and cornstarch and mix until smooth. Pour into the broth mixture, whisking as you add it. Reduce the heat to medium-low and let simmer until the gravy is thickened to your liking.
  5. Serve the meatloaf with the potatoes and gravy.
