This version of the classic Latin American tres leches cake is not only enriched by a trio of milks but also enhanced by the tang of lime and warmth of aromatic nutmeg, then finished with whipped cream and lime zest. It’s a dessert that's both rich and refreshing — the essence of a celebratory treat.

Special equipment:
a 10-inch round cast-iron pan
  1. Prepare a 10-inch cast-iron round pan or skillet by spreading it with some butter. Set aside.
  2. Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only. Heat the grill to 325 degrees F with vents one-third of the way open.
  3. Sift together the flour and baking powder into a large bowl. In another large bowl, cream together the butter and granulated sugar for about 2 minutes, then add the eggs, lime juice, vanilla and nutmeg and mix. Add the dry ingredients and mix until well combined.
  4. Pour the batter into the prepared cast-iron pan. Place on the indirect-heat side of the grill and cover the grill with the lid. Cook until a toothpick inserted into the middle of the cake comes out clean, about 35 minutes. Remove and let cool.
  5. While the cake is baking, whisk together the sweetened condensed milk, evaporated milk and whole milk. Poke holes all over the cooled cake with a skewer or fork, then pour the milk mixture evenly over the top of the cake. Allow all the milk mixture to soak in, at least 30 minutes and up to overnight.
  6. Whip the heavy cream and powdered sugar together until it holds peaks. Spread it evenly over the top of the cake. Garnish with the lime zest. Refrigerate until ready to serve.

Cook’s Note

The cake will take on a slightly smoky flavor when cooked on the grill. If you want to bake it in an oven, you can preheat it to 325 degrees F and bake for 30 to 35 minutes.
