Directions
Heat a small nonstick skillet over medium heat. Spread half of the cheese in an even layer over the bottom of the skillet. Without disturbing the cheese, cook until it begins to bubble, about 1 minute.
Crack 1 egg directly on top of the cheese. Cook until the egg edges are just set, about 2 minutes. Cover the pan, lower the heat and continue cooking until the egg white is set but the yolk is still runny, about 2 more minutes. Season with salt and pepper. Run a spatula around the edge of the egg and cheese to set them free and transfer them to a plate. Repeat with the remaining cheese and egg.
