Potato Latkes

3 potatoes

1 small red onion

2 eggs

1/2 cup flour

Salt and pepper, to taste

Sour cream and apple sauce (optional)


  1. Shred potatoes and onions together. Squeeze in a towel until dry. Add eggs, flour, and season to taste. Fry until golden brown. Serve with sour cream and apple sauce, if desired.
