A DIY bratwurst bar is perfect for a game night in front of the TV. You can mix and match the toppings to your own tastes and those of your guests.

Cheese Sauce:

  1. For the cheese sauce: Heat the milk in a small saucepan over medium heat. Once the edges begin to bubble, add the processed cheese and stir until it melts. Next, add the pepper jack by the handful, letting each addition melt before adding the next. Add salt to taste, cover and set aside.
  2. For the brats: Heat a grill or grill pan over medium-high heat. Grill the brats, flipping occasionally, until heated through and charred, 3 to 4 minutes per side. Set aside on a large board. Brush the buns with the butter and add to the grill for 20 to 30 seconds a side. Add the buns to the board with the brats.
  3. For the toppings: Transfer the cheese sauce to a bowl, or serve it straight from the pan, and add it to the board. Place the spicy brown mustard, pickle relish, marinara sauce, sauerkraut, sweet pickles, pepperoncini, sweet pepper relish, grated pepper jack cheese and pickled sweet peppers in separate bowls and arrange around the board.
