3 thin (1/2 inch) rib-eye steaks

2 tablespoons PW Steak Rub, recipe follows

Butter, for frying 

PW Steak Rub:

2 tablespoons coriander seeds

2 tablespoons fennel seeds

1 tablespoon mustard seeds 

1/4 cup sugar 

2 tablespoons garlic powder 

2 tablespoons onion powder 

2 tablespoons kosher salt 

2 tablespoons ground black pepper 

1 teaspoon red pepper flakes 


  1. Season the steaks with the PW Steak Rub.
  2. Heat a cast-iron skillet over high heat. Add some butter and let it sizzle and start to brown. Fry the steaks for 1 minute per side. Serve.

PW Steak Rub:

Yield: about 1 cup
  1. Heat a skillet over medium heat until hot. Toast the coriander, fennel and mustard seeds until aromatic, 2 to 3 minutes. Grind in a spice grinder until finely ground, then add to a bowl. Add the sugar, garlic powder, onion powder, salt, black pepper and red pepper flakes and mix to combine.
