Petite Filet with Wasabi Cream

Wasabi Cream:

3/4 cup sour cream

1/2 cup mayonnaise

2 tablespoons chopped fresh cilantro 

2 tablespoons heavy cream 

2 tablespoons prepared wasabi 

1 clove garlic, grated 

Salt and freshly ground black pepper

Petite Filet:

3 petite filet (shoulder tender) steaks

Olive oil, for drizzling

Salt and freshly ground black pepper

  1. For the wasabi cream: Combine the sour cream, mayonnaise, cilantro, heavy cream, wasabi, garlic and salt and pepper to taste in a bowl. Chill for 2 hours.
  2. For the petite filet: Preheat the oven to 425 degrees F.
  3. Heat a cast-iron skillet over medium-high heat until hot. Drizzle the steaks with olive oil and season with salt and pepper. Add the steaks to the skillet and sear quickly, about 1 minute per side. Transfer the skillet to the oven and roast for 5 minutes.
  4. Serve with the wasabi cream.
