Pressure Cooker Sausage and Potato Soup

The joy of a pressure cooker is being able to speed through dishes that usually take hours to cook. It can revolutionize the food you serve during your busy work week, and this soup takes a lot less time than it would on the stove.

Special equipment:
an electric pressure cooker
  1. Preheat an electric pressure cooker on the sauté setting.
  2. Add the olive oil and let heat up. Add the garlic, onion, oregano, rosemary and thyme, then stir to combine. Season with the red pepper flakes, salt and pepper. Cook to soften and release the flavors, 2 to 3 minutes. Add the stock and bring to a simmer. Add the potatoes and stir. Pinch the Italian sausage into small “meatballs” and add them directly to the hot stock. Put on the lid and switch the setting to pressure cook for 15 minutes.
  3. Release the pressure manually and remove the lid of the pressure cooker. Stir in the heavy cream and kale. Taste and adjust the seasoning as needed.
  4. Ladle the soup into bowls, then grate over fresh Parmesan and sprinkle basil chiffonade on top.
