Prime Rib Sandwich

Whenever Ree cooks prime rib, she always likes to have leftovers to make these sandwiches. Perfect for a next-day lunch, they are packed with flavor from the Dijon mustard, cheese and a delicious onion sauce.

  1. Heat the butter in a large skillet over medium heat. Add the onions and garlic and stir to coat in the butter. Cook, stirring, until caramelized, 12 to 14 minutes.
  2. Deglaze with the red wine, then bring to a boil and reduce, 2 to 3 minutes. Add the salt and pepper. Stir in the cream and remove from the heat.
  3. Spread the Dijon mustard on one side of the toasted rolls and the peppercorn ranch on the other side. Add the leftover Prime Rib slices to the bottom halves of the rolls.
  4. Heat a nonstick skillet over medium heat. Add the provolone to the skillet and let sit until melted, 1 to 2 minutes. Pour the cheese over the Prime Rib on both sandwiches. Top each with a good amount of the red wine onions and serve.

Ladd’s Prime Rib:

Yield: 4 servings
  1. Place the mustard, mayonnaise, rosemary, thyme, salt, pepper, red pepper flakes and garlic together in a food processor. Pulse until combined and smooth.
  2. Rub all over the prime rib, then let sit for at least 1 hour, or refrigerated up to overnight. If refrigerating, bring the prime rib to room temperature before roasting, about 1 hour.
  3. When ready to cook, preheat the oven to 500 degrees F. Place the prime rib on a rack in a roasting pan.
  4. Roast for 15 minutes, then drop the temperature to 325 degrees F and roast for another 60 to 70 minutes for medium-rare.
  5. Remove the roast to a cutting board and rest for 10 minutes.
  6. Place the roasting pan over medium-high heat. Whisk in the flour to make a roux. Season with a pinch of salt and pepper, then cook until dark golden, 2 to 3 minutes. Slowly whisk in the beef stock until you have the desired consistency.
  7. Slice the prime rib and serve alongside the jus with your favorite sides.
