Sunny's Crispy Cheese-Wrapped Pickle Spears

There’s a clique of pickle lovers out there, and I would like to humbly submit this recipe to them for consideration. It’s a fun way to get a little bit more texture than the crunch from the pickle skin, and another way to add flavor. You can also add some chile-lime seasoning or steak seasoning to the jar of pickles and let them cold soak for a few days before making this to intensify the flavors.

  1. Dust all of the pickles with the seasoning.
  2. On a nonstick pan or griddle on medium heat, add little 3-tablespoon mounds of cheese. Flatten each mound a bit and allow them to melt until they are flat, golden and crispy but still pliable, 4 to 6 minutes.
  3. Remove and quickly roll the pickles in each flattened cheese crisp. Rest on the open fold side to secure. Allow to cool to firm, then serve.
